if you manage a store or restaurant, what do you do with the money earned and where do you keep the money when everyone leaves?

They typically keep it in a safe/vault that is inside of the store or restaurant. They will place it in either one or several safes/vaults until the armed security transporters can take the money and transport it to the bank. They transport all of the money at least once a week typically.

they pay for the facility, the workers, supplies, and other fixed and variable costs
