What chains work on single-speed bikes?

I'm building my first single speed (not fixed) bike & have the crankset that's compatible with 8/9-speed chains. When I get the hubs for the rear wheel will 1/8 or 3/32 compatible cogs work with the same chains (I have about a dozen in reserve)? Also, is there any problem with using a single-speed dedicated chain with a crank that's designed for nine-speed chains?

I know the link thickness matters on shifters but does it matter when there's only one ring?
