Yesterday I roasted a chicken with potatoes, carrots, and onion. This morning I diced some of the roasted potatoes for a hash with my scrambled eggs and ham. For lunch I had a chicken sandwich with the chicken from last night. I also made a chicken soup with about half the remainder of the potatoes and carrots and the rest of the chicken and onion. I ate one bowl and froze the rest. After supper I used the remainder of the potato to make mashed potatoes which I am planning on eating in the next few days. I have some left over carrots (about 2 large portions) and I don't feel like eating them as is. Is there something I can do with them? Should I just freeze them and use a side for a different day? Or is that not a good idea?
I just moved away from home 3 weeks ago and I am on a tight budget. I haven't accumulated many ingredients or supplies yet. I'm trying to be very economical and not waste any food but at the same time, I'll get sick if I just keep eating the same thing over and over. Any suggestions?
Also, do any of you have any other tips for cooking for one? I'm finding it hard. Everything I make has so much darn food left over and I get sick of eating leftovers
