mash the chickpeas and ad tahini and lemon juice with a hint of chilli for a zesty hommus dip... blend it all together and serve with crackers or crunchy bread fried in cheese garlic oil and butter.... tooo awesome for words.
you could try a vegetarian rice dish roast off the vegies... cut them into chunks... steam up some rice and pu the rice in a bowl with some lemon juice chicken stock 1/3 rd cup and salt pepper to taste stir thru and let the rice soak up the liquid.
then in a pan add the sour cream lemon and some sweet chilli to the vegies make a thick sauce of at all. serve up on the rice for a spicy chicken rice and vegie dinner.. the sweet chilli can be used really judiciously or added alst so the kids dont burn their tongues...
