I would advise Jarabacoa. Only river rafting I know of and plenty of hiking in lovely spots. It is up in the mountains and a bit cooler for the Caribbean.
If you want a lot of action to do with Beach go to Cabarete. It is the wind surf capital of the world and they also have surfing and kite surfing there. Young sports minded international crowd who parties all night on the beach.
