I have my salmon recipe perfected. I promise you will love this.
Ingredients:
-Fresh Organic Dill
-Fresh Lemons (A lot)
-Balsamic Vinegar
-Sea Salt Grinder(Trader Joe's $1.99)
-Fresh Peppercorn Grinder (Trader Joe's $1.99)
-Lemon Pepper Grinder (Trader Joe's $1.99)
-Fresh Atlantic Salmon
-Olive Oil
-Mushrooms (Get Creative)
-Green Onion
Instructions
There are two variations to the recipe. If you like a more seared salmon (which I prefer) you will use higher heat, if you like a more tender salmon, lower.
-Coat pan with olive oil
-Place salmon, skin side down, in the pan
-Evenly coat salmon with fresh lemon pepper, salt, and pepper, and squeeze pretty much an entire lemon all over the salmon and the pan, with a dash -just a dash- of Balsamic vinegar
-Tear up the fresh dill and evenly coat the top of the salmon and around the salmon in the pan
-Using a knife cut a few very small shavings from the skin of the lemon and coat evenly over the salmon
-Place green onions and mushrooms in the pan around the salmon (this is just a side thing- adds flavor)
-Grill on medium-high heat for about 10 minutes (keep close eye on everything)
-Flip salmon upside down, adding more lemon so that the dill gets some of the heat and moisture of the pan. leave this way for about 3 minutes.
-Turn salmon back to right side up, add a little more fresh dill/lemon/pepper to taste, check to see that it is cooked through, and voila

Serve with rice and a Waldorf salad, Season salmon to taste again once cooked. Not too much lemon, not too little lemon
