One of my friends is having apricot cornish hens. That sounds so delicious. I'm thinking about copying what she's having and either baking a small chicken or chicken breast with apricot marmalade, red garlic potatoes and string beans, along with cranberry stuffing! I think I'm gonna do it! ( ^ _ ^ )
With the apricot marmalade, do I need to mix it and boil it in chicken broth? Or can I just add the marmalade by itself?
My spices are paprika, black pepper and garlic salt. I'm using olive oil to coat the chicken.
