What are some ways to cook alligator meat?

I bought some farm raised alligator meat, but I've never cooked it before. Any ideas or recipes?
If you don't agree with my eating habits, please don't bother answering, you are not going to make me change my mind, I've heard it all before.
 
My favorite is bite size fried alligator.
Cut up into 2" square pieces. Season with season all or
your favorite seasonings.Add a little bit of mustard and mix well into the seasoned gator pieces. Batter each piece with corn flour or a pre packaged fry batter. Fry in oil at 350 until the pieces float about 15 seconds. Set cooked pieces on a paper towel lined bake dish or pan do not cover the batter will come off.You can put the cooked pieces in the oven on warm until you are finished and ready to serve.You can prepare a dipping sauce with Mayo, Catsup, sweet relish and hot sauce and blend together.Add coleslaw as a side and with the same oil fry hush puppies,tater tots or potatoes.
 
In Louisiana I had alligator jambalaya and also breaded and fried alligator rings or sticks... but I can't tell you the cecipe. Look for the chicken jambalaya and replace chiken by alligator.
