I really want to try cooking some new things I feel like I'm always making the same meals. What are some of your and your family's favorites??

chicken noodle omelet.

you need:
1 cup of chicken breast
half a cup diced bacon
spring onion
little can of corn
2 packets of chicken 2 minute noodles
parsley
eggs
half a cup of grated cheddar cheese

cut up chicken in to little squares & cook in fry pan with bacon
cook noodles & drain.
mix noodles, chicken, bacon, spring onion, drain the corn and add. add parsley & 1 egg- 2 if they are little.
mix well & put in a fry pan on low . spread it out in a circle so it looks like a omelet and simmer for 5 minutes, DO not stir!
sprinkle the top with the grated cheddar cheese & put it under the grill (in the pan) till it browns & melts.. serve hot..

ive had it with chips, greek salad, potato salad, coleslaw, & you can add or take out any ingredients you don't like.
good luck.

This one is my husband's FAVORITE, and its fairly low fat and easy!

AMATRICIANA

INGREDIENTS
1 package prosciutto or pancetta (found in the deli meat section)
1/2 cup chopped onion
1 teaspoon minced garlic
1/4 teaspoon crushed red pepper flakes
2 (14.5 ounce) cans stewed tomatoes
1 pound angel hair pasta
1 tablespoon chopped fresh basil
2 tablespoons grated Parmesan cheese

DIRECTIONS
Cook diced bacon in a large saucepan over medium high heat until crisp, about 5 minutes. Drain all but 2 tablespoons of drippings from the pan.
Add onions, and cook over medium heat about 3 minutes. Stir in garlic and red pepper flakes; cook 30 seconds. Add canned tomatoes, undrained; simmer 10 minutes, breaking up tomatoes.
Meanwhile, cook the pasta in a large pot of 4 quarts boiling salted water until al dente. Drain.
Stir basil into the sauce, and then toss with cooked pasta. Serve with grated Parmesan cheese.

I love to cook but my husband doesn't like much - he likes "kid food" LOL. Here is what we cook:

Spaghetti and meatballs.

Lasagna.

Beef tips and rice or noodles.

Beef stew.

Chicken and dumplings.

Chicken wings fricassee.

Meatloaf.

Tacos and burritos.

Chicken fried steak.

Pizza.

Steak fingers or chicken nuggets and tater tots with white country gravy.

BBQ beef brisket on top of buttered baked potatoes.

One of the easiest is using the crockpot to make a beef and vegetable stew.

1 - 2 pounds stew meat (or cut up a small boneless chuck roast)
1 pack of Lipton Onion Soup mix
3 carrots, peeled and cut up
2 potatoes, peeled and cut up
1/2 cup fresh parsley chopped or dried
1/4 cup chopped green pepper (bell pepper)
2 heaping teaspoons all purpose flour
1 1/2 cups cool water

In a non stick skillet on the stove top, brown stew meat in about 4 tablespoons of corn oil or olive oil. Once it is browned on all sides, put into crockpot with any oil left in pan, and add the next 5 ingredients. Mix the flour in the 1 1/2 cup water until the flour is completely dissolved and add this into the crockpot, and add 5 more cups of water. Salt and Pepper and add some Season All or cajun seasoning such as Tony Chacere's Cajun Seasonings. Stir to mix it all together and cover. Put the crockpot on high and let cook for 4-5 hours, or until meat is tender.

Cook some white rice, we use a rice cooker, but you can use minute rice. Serve the beef stew over the rice and make a salad to go with this. We also serve hot buttered french bread. This is an easy meal.

You can also do this with boneless cut up chicken breast. It makes a delicious chicken stew. Follow the same directions.
