Just looking for your opinion...

I think some of the tops ones are:

Lakers-Celtics
Red Sox-Yankees
Steelers-Browns
Red Wings-Avs
Michigan-OSU (football)
ND-USC (football)
Duke-UNC (basketball)

i know theres also some huge rivalries in European Soccer, so feel free to list some of those as well
 
I'm not going to get into European football as your question says American and European football rivalries would be endless.

In baseball, you left out Dodgers/Giants. HUGE RIVALRY
In NFL, you left out Packers/Bears. HUGE RIVALRY

I'm not going to touch on college sports as SO many conferences have rivalry's. Pretty much an SEC game is a rivalry game.
