Here are a couple recipes that are fast, easy, and delicious.
Honey Baked Chicken
1-1/2 -2 lbs chicken (boneless breasts work great)
3/4 to 1 stick margarine
1/2 cup honey
1/4 cup prepared yellow mustard
1 tsp. salt
1 tsp. curry powder
Place chicken in shallow pan (skin-side up if using bone-in chicken)
Stir together remaining ingredients and melt together in the microwave (or on the stove) being careful not to boil it.
Pour over chicken and bake uncovered in 350 degree oven for 1 hour basting every 15 minutes (if using bone-in chicken pieces, bake for 1 hour and 15 minutes).
Serve with steamed rice and peas.
(To prepare on stovetop. Cut boneless chicken in bite-sized pieces. Sauté in non-stick skillet until slightly browned. Pour sauce over chicken and simmer until sauce is thick and dark. Delicious!)
Quick Chicken with Rice
Small can of peas (don’t drain)
2 cans Swanson’s White Chunk Chicken
1 small jar pimentos, drained (optional)
2 cans cream of chicken soup
1 small can of mushrooms, drained
3/4 cup to 1 cup grated cheddar cheese
Open cans and pour everything into a saucepan. Stir in cheese. Heat gently, stirring often.
Serve over steamed white rice or toast.
