What are some good menu ideas for camping?

I go for things that are easy, don't require a lot of dishes or prep, and can be cooked over either a fire or a stove.

Meat:
Hamburgers (you can cook them over a fire or grill)
BBQ Chicken Breasts (fire or grill)
Steaks (fire or gril)

Sides:
Instant Flavored Mashed Potatoes (very easy... just add boiling water).
Pre-made Potato Salad
Chips
Pre-cut raw vegetables with Ranch dressing
Baked beans (can be warmed up in their own can, thus eliminating some cleanup)

Lunch:
Sandwiches. If you are already bringing stuff for hamburgers, you usually have most of the sides for sandwiches, so just bring some deli meat and some bread and you're good.
Beef Jerkey makes a good finisher for lunch.

Breakfast:
Well, here I break from the "easy to prep, easy to clean" method and usually go for the bacon, eggs, and blueberry pancakes just because it's so yummy.
 
I always bring steak and potatoes... but you have to be seasoned to know how to cook like a king in the woods. I've also done shepards pie (wrap it in foil and throw it on the coals for a bit... an easy starter is hot pockets wrapped in foil, oatmeal for breakfast... soup is easy...
