I like to BBQ my fish. I lightly coat my fish with olive oil, then sprinkle the fish with spice (usually tarragon), squeeze a quarter wedge lemon on the fish. I do all this over a piece of foil. After I am done, I wrap the fish in that same piece of foil and cook it on my BBQ. Be sure that all this is done just before you cook it or the lemon juice will begin to eat through the foil. You cannot prep this meal too far ahead of time.
