what are health trends?

im so confused. what exactly are health trends? i know it means "direction", but i need something more specific.
is it this: mortality rates are increasing because obesity is increasing because there are more fatty foods on the market. ???

and if possible what are trends affecting people who live in rural/isolated areas.?
