so i was watching the longest yard (the newer one) and when they gave that one tough guy the estrogen pills to replace his steroids he got all emotional and behaved just like a girl. would this really happen? would anything physical happen to a guy if he were to take the estrogen for an extended period of time.

Yes it would. If you look into people who are transgendered, you'd find that not much separates us from being one gender or the other. When you change your gender, you are given shots of the opposite hormone (women are given testosterone, and men are given estrogen) on a monthly basis. After a couple of years, your body will make enough of it on it's own, that you only have to get the shot once a year. And yes, it will change your personality. Men that turn to women often times will have mood swings, just like other women, and will lose a lot of their masculine features. With a woman turning into a man, the testosterone will give them facial fur, and will make their hairline recede. Also, their voice will begin to change, and their personality will become more masculine in nature.
So in short- yeah, more or less, the same thing would occur.
