Breakfast Bread
1 lb. Hot sausage
3/4 c. Bisquick baking mix
1 1/4 c. milk
3 eggs
Shredded Cheese
Heat oven to 400 degrees. Grease square baking dish 8x8x2 inch.
Cook and stir sausage in a skillet until brown; drain. Spoon into baking dish.
Beat Bisquick, milk and eggs with a wire whisk. Pour into dish. Sprinkle desired amount of cheese on top
Bake until knife inserted in center comes out clean, about 25 minutes

You need a cast iron skillet or any large skillet that will transfer to the oven (make sure the handle won't burn up, etc.) You can modify the recipe to suit your tastes, but the method is the same. This is basically a quiche without a fussy crust.
12 eggs
1 onion, diced
2 bell peppers, diced
1 can diced tomatoes, drained
2 cups cheese - whatever kind you like. We use pepper jack to spice things up, but you can use cheddar, etc.
2 cups chicken, diced - optional. Veggie lovers is just as good!
Preheat oven to 350 and spray your pan with cooking spray. Start on the stove top over medium-high heat.
Break all eggs into a bowl and beat lightly. NOTE: You can easily half this recipe and use a smaller skillet! Add 1/2 the cheese, the onion, the bell pepper, the tomatoes and the chicken and stir to combine.
Pour into skillet and stir around a bit like you would scrambled eggs. When the mixture begins to set up, stop stirring. Continue to cook on the stove top for 2-3 more minutes, until the frittata starts to set. Sprinkle with remaining cheese.
Move the entire skillet into the oven for about 10 minutes. Check for doneness by inserting toothpick. Remove and let cool for at least 5 minutes.
If you sprayed the skillet, and especially if you used cast iron, you should be able to slide the frittata right out onto a serving platter.
Serve with salsa and sour cream and enjoy!

Apple Baked
1 cup sour cream
1/3 cup brown sugar
12 slices bread
1/2 pound ham
2 cups shredded cheese (any variety)
1 can apple pie filling
1 cup granola with raisins
In small bowl, combine sour cream and brown sugar; chill. Place 6 slices of bread in the bottom of a greased 13x9 baking pan. Layer ham, 1 C cheese, and remaining 6 slices of bread. Spread apple filling over top, sprinkle with granola. Bake in 350 degree oven 25 minutes. Top with remaining cheese and bake 5 minutes or until cheese is melted. Serve with sour cream mixture.

Eggs - 8
Jalapeno peppers - 2 (chopped and seeded)
Green bell pepper - 1/3 cup (chopped)
Tomatoes - 2 (seeded and chopped)
cheddar cheese - 6 slices
Large flour tortillas - 6
Salt and pepper - add to taste
Hot pepper sauce - a dash
Low fat butter - 1 tbsp
Cilantro
Beat the eggs well, and add hot pepper sauce, jalapenos salt, and pepper.
Melt butter in a pan on medium-high heat. Then pour in egg mixture, and cook until the eggs solidify.
Place a slice of cheese on each tortilla. Top with egg mixture, tomatoes, and cilantro.
Roll the tortilla and tuck the ends under. Bake for 10 minutes at 350

Breakfast Salad
fry 1/2 bacon crisp (save drippings)
fry 1/2 bag of frozen hash-browns (the chunky kind)
in the bacon drippings scramble 6 eggs
mix all the above together and serve with biscuits or toast

4 to 6 slices bacon, diced
3 slices bread, lightly buttered
3 eggs, slightly beaten
1 cup milk
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon ground paprika
Cook bacon until browned. Cut bread into smaller pieces. In a lightly buttered deep casserole (1-quart size), make layers of bread pieces and bacon. Whisk together the eggs, milk, salt, mustard, and paprika; pour over bread and bacon. Bake at 350° for about 40 minutes, or until puffy and a knife inserted in center comes out clean
