No souffles this time, as she wanted to have some *meat*!!

The salad dressing was a *HUGE* hit, which went well with the crispy salad
fixins.

Pork, tender and moist, and with the potatos and beans (again) the
flavours matched and complimented each other.



The verdict?


"You can make that again, anytime."

I had two pork fillets, so, you guessed it...... when I asked her what she
wanted for dinner the following night, she said "What I had last
night!" :-)

Now the salad, and dressing, is on the 'favourite' list and is a cinch to
make offhand.




* 1/2 green apple, cored, cut into matchsticks
* 1/2 small Lebanese cucumber, halved, seeded, cut into matchsticks
* 3 radishes, trimmed, cut into matchsticks
* 2 tbs olive oil
* 1 tbs white balsamic vinegar
* 1/2 tsp Dijon mustard
* Pinch of sugar
* 1 tbs fresh chives, cut in 5cm lengths
* Lime wedges, to serve



Method



Combine the apple, cucumber and radish in a bowl. Combine the oil,
vinegar, mustard and sugar in a small jug. Season with salt and pepper.
Add the dressing and chives to the apple mixture and toss to coat.

Strawberries Dipped in Chocolate
1 quart fresh large strawberries, with tops
1 cup milk chocolate chips
1/2 cup semisweet chocolate chips
3 Tbsp. heavy cream
Preparation:
Quickly wash strawberries and dry carefully; keep tops on. In little microwave safe bowl, combine chocolate chips and heavy cream. Microwave on average power for 2 minutes; stir. Continue microwaving in 30 second intervals if needed, until chocolate is melted and combination is smooth. Dip strawberries in chocolate blend and eat.
