There's no point in doing that at all - the process priority is automatically set to low so it will never harm your gaming performance. The folding program never uses CPU cycles if there is another program needing them. Especially when you're folding Gromacs your CPU-temp can go up quite a bit.
For me this was a serious problem as I'm addicted to "silent computing" too, having a low airflow rig etc.
When you fold (and you should when you have your rig running anyway), keep an eye on those temps.
EDIT:
Motherboard Monitor is fine freeware to keep an eye on your CPU and HDs.
Regard the 65 degrees Celsius mark for your CPU as a border you shouldn't cross.
