Twilight vampires and how they eat... I'm confused.?

Okay, so I've recently started reading the Twilight series, and I'm confused about this one thing. So you know how they bite humans to turn them into vampires? and you know how the humans die when their blood gets eaten by the vampires? You see, why don't the humans just turn into vampires when they get eaten, instead of dying? I mean, it makes sense, because to get to the blood, they have to bite the human, which should turn them into vampires, not kill them. Did I miss some important detail on how this works?
 
The transformation takes two days, but if the heart stopps in those two days, the person dies... When a vampire EATS (as opposed to the bite & run) the person is too badly damaged to keep blood circulating or to have enough blood to circulate, thus the heart stops beating.
