Trying to get my dodge truck to run?

I have a 78 dodge w200 that I am restoring. I am almost ready to be able to drive it but I cant get the carb to work right. The truck has been sitting for 6 years and with the edelbrock 750cfm that was on it, it ran rough but it did run. The carb was spitting gas everywhere because the floats were bad. I swapped it with a 600cfm holley double pumper with mechanical secondaries and mechanical choke. Now when I try to start it with the choke closed it runs but starts revving high immediately. With the choke open it won't run for more than a second off the gas squirted into the carb. I've backed the idle and fast idle back but it made no difference. The throttle doesn't appear to be binding up and when I look into the carb all four valves are closed all the way. I've got both floats set so gas just appears over the sight screw in the bowls. I don't hear air being sucked in anywhere and the gaskets are brand new. I already tried replacing them. All vacuum lines are hooked up or plugged. I'm starting to get mad. I had hoped to be driving it this weekend but instead of getting all the other things I need to get done with it I've been wasting my time on the carb.
 
depending on when you kick the choke off, it sounds like an idle mixture/speed issue. Dodges are notorious for dying if you take the choke off too early, let it warm up, the high rev is normal, for the old engines. but after, you will have to do a an idle mixture adjustment. start with just the primaries. turn them all the way in and then turn them out a 1/4 turn. with the truck at normal operating temp and running adjust the idle mixtures 1/4 turn at a time with out adjusting the idle speed, the best way to do this is with a vacume gague, keep adjusting the mixture screws to get the highest vacume reading before adjusting the idle speed. then you can work on the secondaries, but at least it will be drivable.
