I want to buy some plastics and was just wondering what other peoples experience has been swapping between stock to track plastics...

Do you remove the headlights or does it fit over....?

Is it easy to disconnect remove the mirrors/turn signals?

I guess those are the only issues I might face..that I can think of....I am mechanical just never tried to do this yet...

You should be able to do it in about an hour maybe two (depending on which bike you have). On my 848 I break it down in about an hour putting it back together takes a little longer though. The headlights have to come off as well as the mirrors, but the best advice I can give you is to get ahold of the microfiche and take pictures of your teardown process they will come in handy when you put it back together. You might want to get a zip lock bag or something to keep your extra bolts in because you won't use them all for the track plastics.
 
I didn't swap mine for track day, however, removed the mirrors yes.

Simply unscrew the 2 bolts from underside of nose fairing going into the turn signal stalk, once removed a slight bending pressure or pull, will separate the ball socket from its receiver, disconnect the wiring connector and your done. I used a zip tie routing it through the two holes of the mirror mount so the tie itself wouldn't scratch the fairing.

As for bolts etc. when we strip our Shadow TUAS (unmanned aerial vehicle) we use a small tackle-bait box with dividers, segregating each location of fastener into its own compartment. I've also done this while rebuilding LSx engines and the likes. GL.
