toyota echo brake grinding after installing new pads and rotors at low speeds?

ive installed new front brake pads and new rotors on my 2000 toyota echo. with the new installation of the pads and rotors i now have a grinding noise at low speeds when brake. initially i believed it might be a wearing period type of issue but after 3000 miles it still occurs. i bought both the rotor and pads after-market from autozone. i also believe i failed to perform a 40-50 mph "braking" in of the new parts after installing.

so to recap
1.) installed new pads and rotors. re-greased everything including caliper pins.
2.) after install a grinding noise now occurs at low speeds that was non-existant previously. the problem typically isn't bad/isn't there upon initial driving of the car but as more stopping/driving occurs the problem begins and gets worse.
3.) upon inspection of pads and rotors all wear is normal/as expected after 3000 miles and there is NO warping of brake rotors, NO vibration of brake pedal upon braking, no visible damage to the caliper or any other brake parts.
4.) the brakes DO function perfectly fine other than the awful sounding grinding noise. mind you its a low pitched grinding/groaning noise NOT a high pitched squealing that is associated typically with worn brake pads.
5.) the grinding/groaning occurs whether traveling forward, backwards, or turning to either side.

any ideas would be helpful as im stumped!!

thanks
