this ohms thing is a bit baffeling?

so i know ohms is a measure of resistance. i know you can get 1,2 and 4 ohm amps, now doe the subs have variable ohms setting or are the fixed? i would have to assume that you want as low of ohms as you can get, because less resistance equals more watts, so why dont they all manufacture 1 ohm subs? can someone clarify this a bit for me.
