Because we simply don't have the capacity to be eternal beings, least of all omnipotent... if we were to know all that happened in the cosmos eternally and infinitely, our brains would fry from information overload. The same attributes that apply to life as we know it would undoubtedly apply for any god who you claimed to be alive, they would have very similar ways in their physical characteristics as we.
