Even if you accept RB's argument about the concept being the most important part, the show was never built around that.
Week after week the tasks were about the quality of the cooking and front of house service. RB was insistent that they cooked/baked the food and quized them on this and commented on the quality week after week.
If the concept was such an important part and the actual cooking and even front of house secondary, then why didn't the show allow them to manage the kitchen/front of house and bring in a head chef to do the all the cooking and a head waiter. (Oh wait a minute JJ did try that in his kitchen, letting the other chef do all the work and did Raymond not insist that JJ cooked).
In the final test they were made to get on with it themselves with very minor assistance, so the idea is we are testing your skills as a chef and in front of house.
So how RB can now say its mainly about the concept is a farce. It may be a factor but the show was never built around that as the main focus and to fail so miserably in the last task, designed to test your cooking skills and still win was a disgrace.
The whole series wasn't a patch on the last two and hopefully is the last but it wouldn't matter for me as wouldn't watch another series. All three judges IMO now lack credibility for any future programmes on cooking or restaurants.
