Pink Floyd - Dogs. I was only listening to this yesterday for the umpteenth time and it has every single thing I like in music and I never ever get tired of playing this song.
 
i would have to say "Bohemeian Rhaspody" by Queen. freddie mercury's vocals throughout the entire song are awesome, and the whole choir-arrangement thing he does is equally awesome. this song starts out a quiet ballad , then rolls into an a very upbeat and driving middle, then snowballs its way to hard rock with a brian may driven guitar solo, and in its final moments degresses its way into a ballad, just as it begun.

Oddly enough for me, I'm going to have to say Blink 182 - Dammit, though the cover System of a down did (i think its them, may just be serj) was amazing, i still love the beat and its fun to play slowed down
 
I think my favourite siong must be Redemption Song by Bob Marley, even the cover by Joe Strummer and the Mescaleros was great. It narrowly beats One Week by The Barenaked Ladies.
 
Oh damn...that is nice, I'd never heard it! Mike Patton has been one of my favorite singers since about 1990. He neeRAB to sing more, too many projects with just voice effects. That cover is awesome. Dammit I really regret missing a Fantomas show back around 2005. :(
