Tethering on iPhone and iTouch

Hi,

I have each of these on 3.1.2 (7D11), with the iPhone running 05.11.07.

I have jailbreaked each with blackra1n but wondering is there an untethered option so i can switch off/on without a computer?

Also, when i sync with iTunes, i lose some apps that i have downloaded via Installous, is that normal?
