Temperature Gauge on Mazda 323 faulty?

Hi,
I was driving my 1989 Mazda 323 5mins from the house, up and down a couple of hills, enough to get the engine hot.
But I suddenly noticed the temperature gauge hit maximum and stayed there! So I pulled over and left the car there overnight. Seemed like there was plenty of water in the radiator. Some friends suggested removing the part between the engine and the radiator. I forget the name, but it closes up during cold weather apparently and can permanently seize (anyone know the name?). Or the water pump is damaged. Went back today to pickup. The temperature gauge sat on 0 degrees the whole way. I'm guessing it's the temperature gauge or thermostat that's faulty. Any ideas anyone?
