Taking a two year old tent camping in the Smoky Mountains... Suggestions?

We're taking our 2-1/2 year old camping in the beginning of June. I would really love to hear any suggestions on activities, ways to keep things sane around camp, food ideas... really anything to make the trip easier or more fun. We'll be there 5 days and we'll have electric but no water. Bath houses and all that are only 300 ft away.

We'll also be driving 12 hours to get there, so any ideas for the car trip would be appreciated as well!
