My wife and I like to watch the Superbowl together. Nobody invites us to
parties anymore. They don't like my lamp hat.
While I was shopping for fare, Raley's had pineapples for sale, so I
bought one. I buy about one a year and we eat about half of it cut up in
a bowl before burning out. We both like pi?a colada yogurt, but alas,
the containers are so small.
So I bought some grated coconut and a couple of six or seven ounce
containers of plain yogurt. I processed the pineapple into bite sized
chunks, mixed liberally with coconut and used honey-yogurt as the
dressing (I forgot the lemon juice). It's quite good. I believe we'll
finish the pineapple for once.
I'm sure a thousand variations of this sort of fruit salad are on the
net. I think raisins (DW doesn't like) and almond slivers (DW doesn't
like) would be a plus. We'll be doing this again the next time pineapple
goes on sale in about a year.
