So what is the other 12% in Taco Bells' "Beef"?

They seem awfully proud that their "seasoned beef" is 88% beef...when we make tacos at home our "seasonings" damn sure aren't anywhere near 12% (I would guess less than 1%)...so what the hell is in that 12%?
