should the government be telling restaurants how much salt to use?

No and I wish all the restaurants in NYC would shut their doors and relocate to send a message to the government saying that they wont allow it to tell them how to run their businesses.

Look, all the robots that voted the populist president are getting the trail spin of "change."
Health-fare needs money and blame to "work." There is not enough money even by taxing what's left of our economy. SO, in order to condition us for failures in the health-fare system, the gov-o-crates will dictate what we eat and how we spice our food for "health" reasons. The dingle-dog left loves it. Those of you that read thoughts of Chairman Mao, know that he was dictating to the little socialists in China how many times then had to crew their food! The point is, it'll get worse with social-crates and finger pointing as to why the health-fare program does not work. Remember, government creates a problem, then they have the solution..more government. It's right our of the communist play book and stupid Americans are buying into it.

There was a less draconian approach they could have used... they could have told them to simply switch to sea salt. Sea salt is GOOD for your blood pressure and just generally healthier. AND most people who compare the flavor of table salt to sea salt prefer sea salt.

Being on a low salt diet for several years I know just how impossible it is to buy foods that are low on salt. Even grocery stores put "solutions" in their meats so they can sell you an inferior product at $4 per pound that is 15% saltwater solution.
I buy meat at a meat market because it is impossible to otherwise control my diet. If I buy what the stores sell, I can't keep salt at even the maximum levels recommended for healthy individuals.
Read the labels on canned foods and snacks. Add up the percentages and you can't ignore the facts. We eat way to much salt.
You soon get used to that "bland" low salt diet and every prepared food you eat tastes like salt. The natural flavors are disguised and covered over by all the brine. It is an easy way for them to sell low quality foods and cover up those rancid flavors. It allows them to use cheap salt instead of healthier herbs and spices for added high-quality flavorings.
Government regulations? No.
Informed customers with accurate information made available to the customers by the restaurants and food distributors? YES!
If I want salt, I can add it myself. There is a salt shaker on the table.

No. The government should not have any say in what we put in our bodies. HOWEVER, restaurants should be required to accurately report what is in their food.

No but I don't think that they should order them not to cook in trans-fats either. A requirement to advise the public that they use trans-fats should have been sufficient..

No the costumer who goes to the restaurant and orders their food should tell the restaurant how much salt they should use when preparing.
