Should I sell my bike privately with a buyer who wants to make payments for a year?

I'm selling my motorcycle and this guy wants to make payments since he doesnt have the cash in full at the time. I really need to sell. He's willing to make a downpayment and pay monthly for a year. He offered to have a contract notarized stating that he will make payments directly to me every month. Has anyone done this? Would you trust this? I feel like what going to stop him from running off with my bike and my money
