should i cook soup in a slow cooker on low or high over nigh- aprox 9 hours?

im making borsht in my new slow cooker. im making it tonight and i was wondering if i should have it on high or low for 9 hours and then while i go to work i will be leaving it for another 9 hours but while i am at work i will set it to low.
how do times for a slow cooker work?
