Repainting a car help?

Wash thoroughly
Follow with 800 grit sandpaper until surface is scratched evenly
Wipe with "Prep Solution" to degrease and remove fingerprints (ventilation is important here )
LIGHT spray of FLAT BLACK primer
800 grit sand over the primer to find high and low spots.
Repair panel as needed
800 grit wet sand
 
I have a ford falcon im currently thinking about repainting. The paint is not flaky in any way i just want to repaint it to look a bit more special.
I just wanted to know how far i have to sand the current paint down. all the way to the metal or just until the shinyness has gone.

any help would be much appreciated.
