Recently purchased a 26" mongoose mountain bike, been having issues with it

shifting gears when i peddle hard? It only seems to be a problem if i have to stand up to peddle hard or fast to get around objects or out of the way. Its a 21 speed and it does this in all 3 modes, 1st, 2nd, and 3rd and 1-21.
 
First off, you should NEVER pedal hard when shifting. Always ease up on your pedaling a bit, shift, then continue pedaling. If your bike isn't shifting through each gear completely, try this:

1. Shift the front and rear derailleur to the smaller number indicated.

2. Locate the two, small Phillips head screws on the rear derailleur, and indicate which is the low and high.

3. Once you've indicated which screw is low and high, turn the low screw in quarter increments until the gear pulley is vertically aligned with the largest cog.

Now try and shift through all the gear while pedaling. Remember to ease up on your pedaling while shifting.
 
You never want to shift gears while you are pedaling hard. Stay far away from the screws on the derailleurs or you will mess things up real good. You may just need to adjust for the cable stretch on the rear derailleur. Watch this video and STAY AWAY from the adjustment screws.
