Really no time to cook, but must?

I have to put in about 50 hours of duties between my teaching job and my graduate school. I have my mom's cook cook for my little family twice a week. I thought this would help me cook on other days, but as it turns out, we eat the left overs twice a week as well. So I only have the weekend to cook, but I'd be too exhausted by the weekend.

The problem is that my husband likes rice and chicken, and I like vegan food so much. I don't know where to start to have a compromise. He doesn't mind vegan, but he doesn't want to eat salads all day long. I tried to soak black eye peas this week, but I forgot about them for 3 days (no good) soaking. Maybe I should stick to mung beans and lentils, because they need no soaking? I really need to know what vegan dishes can be cooked in 15 minutes with ingredients that can be stored at home, and not to have to run the store everytime I need to cook. thanks.
