time or short? If you are a chef please don't answer this you cook from what you learn in school. I am interested in hearing from people who been cooking this stuff at least once a week for years for their families. TY.
A Neapolitan that I know tells me they cook it a short time. There is a taste difference from the way he makes it to the way I make it. So I just want to know from others who make homemade Italian gravy how long do you usually cook it? This must be a regiion thing. Thats what I'm thinking. I'm cooking right now cause the fams coming over for dinner.
Let me also add this please do not try to correct me when I call it Italian gravy that is what we DO call it and you try and correct us and call it sauce just proves you aren't really authentic. There are some Italians that call it sauce just to appease the mass majority and conform to what they know. Why should I change? I been calling it gravy since birth.
