RAW vs JPEG.. They say you can't edit JPG files.. but I can.. using Photoshop.. right?

I took some RAW and JPEG pictures and couldn't really see a different between the two.. I saw some difference, but not a significant amount..

And at any rate, I can adjust exposure levels and all that in Photoshop too, so.. why shoot RAW when I can still do the same thing with the JPEG??

I'm watching videos on the differences, but I haven't seen this question answered yet...

The closest is the claim that RAW is better because they tweak it the way they want later.. but you can tweak JPEGs later to get it exactly as you like it too, so that confuses me..
