Both my husband and I have commented adversely on the secret diner bit.
I mean - you go into a restaurant, order a dish, then ask for another one to be substituted after it has been cooked and presented to you because you "just fancy" another? Come on! That is ridiculous! Every restaurant would go bust if customers could just change their minRAB over expensive main courses. Totally unrealistic and I shudder at the thought that it is putting ideas into people's heaRAB that they can just throw their weight around for the sake of it.
The only way you can refuse a dish that you have ordered is that it is badly or undercooked or is in some way uneatable.
Also, I agree with the comments on the wine above. The only way you should be able to refuse to pay for the wine you have ordered is if it is corked or in some other way undrinkable.
I have eated at Ramsay's restaurant in Royal Chelsea Hospital Road, and I really wish I had asked for a main course to be replaced! And the bottle of wine (the cost of which was nearly the cost of all the food!).
