Questions about antibiotics/amoxicillin? Can any doctors or RNs help me out?

I've got a cold-turned-bacterial sinus infection with elevated temp/very low grade fever and was prescribed 2000/mg of amoxicillin a day for ten days; two 500mg capsules in the morning and two 500mg capsules 8-12 hours later. I assume this dosage is to knock out this month-old sinus infection quickly and efficiently. I've only ever been on antibiotics once before in my life about eleven years ago when I was 15 for a sinus infection and it was the same drug, amoxicillin. I remember the dose I took was just one pill twice a day for a week. Since it's been so long, I have a few questions I forgot to ask the RN at the clinic and hope some RN/Doctor types on here would be willing to answer them. :)

- Does the dosage matter in terms of the possibility of side effects, like diarrhea or yeast infection? Do I have a higher risk of side effects because I'm taking more? Is this dose okay with my body type (26yo F 5'6" 128lbs)?

- It's been about 16 hours since my first dose. I assume I'm not allergic or anything since I've had no life-threatening side effects. Is this accurate?

- I have IBS/sensitive stomach. Can I take Pepto-Bismol if I need to?

- Is it true I should be eating a lot of yogurt with probiotics to help the "good" bacteria? Will this help prevent any further complications down the road, like yeast infection or anything?

- What is C.Diff and should I worry about catching it after I'm better? Is there anything I can do to prevent it?
