Question with attracting birds to my garden?

If I leave my pomegranate tree and orange tree to have fruits and let the fruits drop to the ground, and also if I let my cosmos, zinnia, and larkspur go to seed, will the wild birds eat those? I live in the bay area in California. Thanks
