Question to do with cooking fudge?

I have read in several places different ways to cook the sugar/butter/milk mixture of fudge. While cooking it to the soft ball stage, I have read that I should stir it, and also that I should not.

I would like to try not stirring it, but wouldn't that make it burn? Does sugar not burn?
 
Hi, Depending on the sugar. white sugar should not be stirred in certain recipes,because it will form larger crystals and can set like roughly crushed glass. Brown sugar is easier to work with and can be stirred as it has a certain amount of moisture in it. Sugar especially white can turn as black as coal in literally seconds. I you have other ingredients in it such as butter milk or cream syrup or honey etc these would moisten the sugar and make it less likely to burn straight away. However you must always watch sugar when you are working with it as it can be very dangerous to work with if you are not careful. If you get a burn from molten sugar it is like getting burnt with melted rubber or glass. It does not cool very quickly so take care and always be aware of what is going on around you. If you think it is getting too hot and is sticking to the pan, stick the bottom of your pan in a bigger pan with some cold water in it to cool it down. You should not need this for fudge though.
