Question about THE BIG 3?

Okay so when doing the big 3...I hear that you just leave the old wires there. That doesnt make much sense to me. So there will be 2 wires next to each other or what? When adding the new wires why would you leave the old ones there? And also, how are you suppose to add new wires if the stock wires are already there?
