question about cooking shoulders legs and racks of lambs?

when cooking these parts of the lamb do they need to be in the fat or on a rack with the fat and veg underneath.

if anyone can give tips on the best way to cook these i`d be grateful thanks
also when buying beef ribs per joint typically how many do you get and how many should you allow per portion. also how do you carve it and can they be served like chops
