Pulled Pork Cooking time[s]?

Im making pulled pork.. i've reviewed a couple cooking recipes online, and they all had varied cooking times and oven degrees. This boston butt is 5.58 lbs.

[recipes didnt indicate size of boston butt.. just said "large"]

what would be the ideal cooking time and what temp. should i cook it at? the recipe generally said 300 degrees for 4-6 hours..

Oh.. and should i cover it while it cooks to prevent drying it out? or is there a method i can use to make sure it wont dry out? i'd hate to make all this food and it go dry!!

This is my recipe for Barbecued Pulled Pork, I cook mine uncovered because you want that nice mahogany type color when finished. I top by with sauce then coleslaw. I don't mix the meat together with bbq sauce, shreds the meat to much.

1 boneless pork shoulder or butt (4 1/2 - 5 1/2 pounds)

Dry Ingredients:
1 1/4 cup brown sugar
2 tbsp paprika
2 tbsp chipotle chile powder
1 tsp cayenne pepper
2 tbsp chile powder
3 tbsp kosher salt
2 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder

Wet Ingredients:
1/4 cup cider vinegar
1/4 cup vegetable oil

# In small bowl combine dry ingredients and mix well. Reserve half of mixture for later use. Add wet ingredients and mix well.

Trim excess fat from port. You want a 1/4 - 1/2 inch layer on the top. Place meat in a glass baking dish and rub marinade mixture all over pork, get the nooks so the salt can penetrate the meat. Cover with plastic wrap and marinade in refrigerator at least 4 hours and up to overnight.

# Allow meat to sit at room temperature for 30 minutes before cooking. Preheat oven to 325 degrees. Place pork in a roasting pan. Cook for 3 1/2 to 4 hours or until the outside is crispy-brown. Let meat rest on a cutting board 10 - 15 minutes before pulling apart. While meat is resting prepare the sauce.

The Sauce
1/2 cup cider vinegar
1 can cola, not diet
2 sweet onions, thinly sliced
3 cloves minced garlic

# Place roasting pan on stove top. Tilt the pan and spoon out fat, try to keep the brown bits in tact. Turn to medium heat, add 1/2 bottle dark beer to deglaze, scrapping the brown bits off the bottom. Add 1 table spoon olive oil and the onions. Cook until tender. Add garlic cook 5 minutes or until soft. Add 1/2 can cola and cook until mixture is reduced by half.

# Mix the following ingredients in a medium glass bowl. Add to roasting pan and cook all ingredients until heated through.

Barbecue Sauce
2 cup regular barbecue sauce
1/2 cup cider vinegar
1 cup ketchup
2 tbs Tabasco
2 tbs pepper
2 tsp salt
2 tsp garlic powder
2 tsp onion powder
1 tsp chile powder
2 tbs brown sugar
