Pontiac Firebird overheating..not turning on regularly?

My firebird is overheating... just replaced the thermostat....(is there a certain way to put in the thermostat) so it overheats alot... the gauge goes up and down alot just randomly also when i turn on my car.. my car struggles to get going like it will give a little gas than stop, then give a little more
