Here in southern California, I fish mostly for Micropterus salmoides, but I also enjoy light line fights with Pomoxis nigromaculatus, Lepomis microlophus, and Lepomis macrochirus. My dad and I also fish for Ictalurus punctatus while we're up at the lake night fishing. The only other fish our home lake has is Oncorhynchus mykiss, which I would prefer using for bait.
My biggest fish so far, Cyprinus carpio, 20.2 kilos, was caught on 8 pound line while using a 6" oxblood/red flake Texas rigged plastic worm by Roboworm while fishing for Micropterus salmoides in my float tube.
I would love to go to Florida and fish in one of the many canals for an Astronotus ocellatus or Cichla temensis. The Trinity River in Texas is another destination I would love to go. I hear a 300+ pound Atractosteus spatula calling my name.
