i used to have a streaming online radio show called Outta Step Radio, and we had a segment where we talked about comic books and cartoons, there's about 30 2-3 hour episodes I have recorded, but i havent put them up online yet. we were on www.officialfnradio.com from february to september of 2008.
 
I I listen to "Lupin Has Three Jackets" (although that's anime-related, and a specific anime as well, so perhaps not what you're looking for) and "The Animation Podcast" which focuses more on the process of animating a character. It's a series of interviews with great animators, mostly from Disney, and is hosted by a current Disney animator.

I think if you just do a Google search or something you should be able to find some other ones, as the host of the Animation Podcast has mentioned repeatedly that there are many other ones out there.
 
I sporadically listen to Anime World Order, Anime Today (produced by The Right Stuf on-line anime store), Destroy All Podcasts (covers more than just anime, including American animation, sci-fi movies and TV, etc), and Rocket Punch.

Anime Today is an all-ages podcast, the others, particularly AWO, often feature adult language and discussions, so be forewarned.
 
You could try Anime Counterpoint - it doesn't focus so much on individual shows as it does talking about various topics about anime (like how foreigners are portrayed, how it's advertised, and so on). It's pretty interesting :)
 
It's not a podcast, but I do have an internet radio station. The link to Toon Radio is in my sig. However, it is down as the time I am posting this due to network problems with Verizon. It should be online by Monday, though.
 
I mostly listen to Daizenshu EX the podcast. It the most up to date podcast with Dragon Ball information out there, I am waiting to see what big coverage they're giving for DBE release in Japan.
 
Toon Zone had a podcast a while ago, it wasn't good and only lasted a little bit however It'd be nice if they tried it again with a totally different format.
