picture sizing, the settings in my camera, please help?

I HAVE A CANON REBEL XTIand I've looked in the manual, but it doesnt say anything about how to set a default picture size. Is there a way to do this? EVERYTIME I SEND AN 8X10 OR ABOVE IN TO ORDER IT CUTS HALF THE PICTURE OUT, THEY SAID IT HAD SOMETHING TO DO WITH THE SIZES OF MY PICTURES, IVE TRYED TO RESIZE THE PICTURES IN PHOTOSHOP ELEMENTS 6 BUT I GET THE SAME THING, HELP!!! WHAT DO I DO!!! PLEASE. THANKS EVERYONE. DONNA
 
Why don't you try this, it may have your answer,

No default is ever the best setting for any thing.

Set the camera to the highest resolution it will produce.

Then depending upon what size photo you are going to have printed, crop the image to the exact size using your cropping tool ... 8x10 for 8x10 @ 300 DPI etc. Then you can control what part of the image is cropped out. Just remember to rename the new file so you do not overwrite your original
